An attempt at banana Nutella bread


Many times I have made banana cupcakes with a dollop of Nutella swirled into them just before baking but have never tried mixing Nutella into part of the batter and then swirling the two together in a bread pan. I had some overripe bananas sitting here and decided to whip them up into a simple banana Nutella loaf – will see how it turned out when someone shows up to try it. (Or I can take it somewhere for someone to gobble it up and pronounce judgment.)

Swirled banana Nutella bread

2 1/3 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
Two mashed ripe banana
6 tablespoons butter, softened
1 cup packed brown sugar
1 teaspoon vanilla extract
2 large eggs
3/4 cup Nutella

Heat oven to 350F/175C. Grease a 9-inch bread loaf pan.

In one bowl, sift together flour, baking powder, baking soda.

In another large bowl, beat together banana, butter, brown sugar and vanilla until creamy and well combined – about 2 minutes. Beat in eggs until well combined – another 2 minutes. Reduce mixer speed to low and beat in flour mixture until just combined. Put half of the batter into another bowl; mix Nutella into the other half until just combined.

Alternate spoonfuls of batter into loaf pan until all of the batter is used up. Swirl batter gently with a knife. Bake 1 hour or until risen, golden brown in color, and a toothpick inserted into bread comes out with moist crumbs attached.

Makes 1 loaf
