This is not exactly a recipe – just had to make something up on the fly when cooking for a guest. While undertaking the cooking, I realized just what a mundane struggle it is for people who have to cook – and think up something to cook – every single day.
Here's basically what I did:
Two or three thawed or fresh boneless chicken breasts
Oil a glass baking dish
Mix:
About a teaspoon of salt
a teaspoon of pepper
3/4 teaspoons paprika
1/2 teaspoon dried oregano
1/2 teaspoon cumin powder
2 tablespoons olive oil
Slice two medium lemons very thinly.
Coat the chicken breast in the spice and oil mixture on both sides. Place in prepared glass dish (you could also slice onions and place them in the bottom of the pan as well). Top the chicken breasts with the lemon slices.
Bake 50 to 55 minutes in a 180C oven.
