We wanted something warm and simple. I whipped up something sort of healthy, sort of cheesy.
I sautéed onions in some olive oil for about 15 minutes on low-medium heat. I threw in some halved grape tomatoes and some broccoli florets and let cook for another two or so minutes. I stirred in about a cup of rinsed quinoa and two cloves of minced garlic. Cooked another three or four minutes. I added about 1.5 cups of broth (mixed boiling water with about two-thirds of a vegetable bouillon cube) to the mix and reduced the heat and let this simmer for about ten minutes (until the liquid has mostly soaked in).
I preheated the oven to about 180C, sprayed a baking dish with spray.
While letting the quinoa concoction sit as described above, I whisked an egg with a half a cup of milk. I mixed the quinoa into this whisked mixture and then threw in some grated cheddar (1 cup or so). I mixed all of this together, put it in the prepared baking dish and then sprinkled another half cup of cheese on top. You could also add some bread crumbs or something on top (I didn’t). Bake about 20 to 30 minutes.
