The absence of Rolo candy in Norway and Sweden is no reason to forgo the plan to make caramel-stuffed chocolate cookies. I substituted with Smil.
We shall see how it turns out as a part of my anti-Valentine stuffed cookie party.
2 1/2 cups flour
3/4 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1 cup sugar
1 cup brown sugar
1 cup butter, softened
2 teaspoons vanilla
48 Rolo (or Smil) candies
1 tablespoon sugar, for rolling
Preheat oven to 375F.
Beat sugars and butter together. Add eggs, then vanilla. Beat well and then add dry ingredients.
Take 1 tablespoon of dough and shape around Rolo or Smil candy. Cover completely. Roll in sugar.
Bake 7 to 10 minutes until set.
