Make a carrot sandwich! Taste tested and approved by my personal taste tester!

Carrot sandwich cookies with cream cheese filling
1 1/8 cup flour
1 teaspoon cinnamon
½ teaspoon baking soda
½ cup softened butter
1/3 cup + 2 tablespoons sugar
1/3 cup + 2 tablespoons brown sugar
1 large egg
½ teaspoon vanilla
1 cup finely grated carrot

Preheat oven to 375F (about 180C).
Whisk dry ingredients together.
Mix all wet ingredients until combined. Mix in the dry ingredients until just moistened.
Use half a tablespoon on a parchment-lined cookie sheet and bake about 12 minutes (turning the pan around halfway through).

Cream cheese filling
8 ounce package of cream cheese (about 200g container)
¼ cup honey (I used orange blossom honey)

Mix cream cheese and honey together until desired, spreadable consistency is achieved.
Spread the cream cheese filling onto one of the backsides of the completely cooled carrot cookies and top with the bottom side of another carrot cookie (make a sandwich).
